Steamed Pomfret with Black Bean Sauce

  • Make a few diagonal cuts on both sides of the pomfret fish to help it cook evenly.

  • In a bowl, mix the mashed fermented black beans, minced garlic, soy sauce, oyster sauce, sugar, sesame oil, and water.

  • Place the pomfret fish on a heatproof dish and pour the black bean sauce mixture over the fish. Ensure the fish is well coated with the sauce, including inside the cuts.

  • Prepare a steamer and steam the pomfret fish for about 15-20 minutes until it is cooked through. Cooking time may vary depending on the size of the fish.

  • Check the water level in the steamer periodically and add more water if needed.

  • Once the fish is cooked, garnish with chopped green onions before serving.

  • 2 tablespoons fermented black beans (豆豉), rinsed and mashed

  • 2 cloves of garlic, minced

  • 1/2 teaspoon sesame oil

  • 1/2 cup water

  • Green onions for garnish
